Dec. 9th, 2008 09:12 pmI like to bake, but the times when I do, I have a tendency just to make the same things as I always do. So please, help me get out of this rut and share your favourite biscuit (cookie, for the North Americans) and cupcake recipes!

* 1/2 cup flour
* 1 large onions, chopped
* 1 bell peppers, chopped
* 2 ribs celery, chopped
* 2 - 4 cloves garlic, minced
* 2 litres chicken stock
* 1 bay leaves
* 2 teaspoons Creole seasoning, or to taste
* 1 teaspoon dried thyme leaves
* Salt and freshly ground black pepper to taste
* 700grams chicken breast or things, cut into cubes
* 500 grams chorozio sausage
Season the chicken with salt, pepper and Creole seasoning. If you can, marinate in the fridge for a few hours to get the spices to permate the meat. Brown the chorozo, pour off most of the fat, and then cook the chicken in the chorozio fat. It infuses the chicken with a great taste!
In a large, heavy pot, heat the oil and cook the flour in the oil over medium to high heat (depending on your roux-making skill), stirring constantly, until the roux reaches a dark reddish-brown color, almost the color of coffee or milk chocolate for a Cajun-style roux. If you want to save time, or prefer a more New Orleans-style roux, cook it to a medium, peanut-butter color, over lower heat if you're nervous about burning it.
Add the vegetables and stir quickly. This cooks the vegetables and also stops the roux from cooking further. Continue to cook, stirring constantly, for about 4 minutes.
Add the stock, seasonings, chicken and sausage. Bring to a boil, then cook for about one hour, skimming fat off the top as needed.
Serve over rice in large shallow bowls. Accompany with a good beer and lots of hot, crispy French bread.
YIELD: About 6 servings.
CREOLE SEASONING:
* 2 1/2 tablespoons paprika
* 2 tablespoons salt
* 2 tablespoons garlic powder
* 1 tablespoon onion powder
* 1 tablespoon black pepper
* 1 tablespoon cayenne pepper
* 1 tablespoon dried leaf oregano
* 1 tablespoon dried leaf thyme
Combine all ingredients thoroughly and store in an airtight container.
It's a very hearty and comfort food meal - serves for us for quite a while!

1 cup white sugar
2 eggs
1 cup butter
1 tsp baking soda
1 tsp vanilla extract
1 tsp salt
2 cups chocolate chips
preheat oven to 375 F (don't know the Celsius, sorry), cook for ~14 minutes. Makes around 5 dozen give or take a dozen.

125g unsalted butter
110g caster sugar
100g brown sugar
1/2 tsp vanilla
1 (55g) egg
110g rolled oats
1250g plain flour
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp bicarbonate of soda
175g dark chocolate -- chips or chunks
150g roasted hazelnuts -- chopped
Cream butter and sugar and salt. Stir in egg. Sift and then fold in flour, baking soda, bicarb. Fold in oats, chocolate and nuts. Use an ice-cream scoop to form large walnut sized balls. Flatten slightly and bake for 10-11 minutes. Do not over-bake.

(with additions by Chris)
2 oz Baker’s chocolate
1 c Butter, at room temp
¾ c White sugar
¾ c Packed brown sugar
2 Eggs, at room temp
1 t Baking soda
1 T Hot water
2½ c Flour
2 c Oats
2 t Cinnamon (optional)
Preheat oven to 350
Bring to room temp:
• 1 cup butter
• 2 eggs
Melt in a double boiler (or over very low heat):
• 2 oz. unsweetened baker’s chocolate
• 2 T butter of the butter
Cool the mixture to room temp
Cream together:
• The rest of the butter
• ¾ cup white sugar
• ¾ cup packed brown sugar (Chris’s change: You can replace either of the sugars with honey for a slightly different flavor)
Beat in one at a time:
• The 2 room temp eggs
Add and mix well:
• The melted chocolate
• 2 tsp cinnamon (Chris’s change: Very yummy but different)
Mix in:
• 1 teaspoon baking soda
• 1 tablespoon hot water
Mix in a little at time (by hand if it gets too stiff):
• 2 ½ cups flour
Fold in by hand:
• 2 cups oats (Chris’s change: I use more like 2 ½ to 3 cups oats, especially if I’ve used honey for some of the sweetener)
Drop dough on cookie sheet in teaspoon sized drops.
Bake for about 10 to 12 minutes.
